At its simplest, succotash is nothing more than lima beans and corn cooked with butter and cream. Sounds delicious (and it can be), but even good succotash is awfully rich. To lighten up this summer side dish, we swapped the flavor-muddling dairy and replaced it with a fresh olive oil-based dressing.

Great to finally learn what succotash is!
Previously I only knew the word from Looney Tunes Sylvester's trademark exclamation "Sufferin' succotash!"
