Mark Bittman's books are fantastic. His video podcast, well, that's another story. But this book, like his others (and I own most of them), is superb. I'm not a vegetarian, but I use this book to get ideas for cooking vegetables -- and I cook a lot of vegetables.
Of the 30 or so cookbooks I own, this one probably has the most cooking splatter on it. It's my go-to cookbook for any side dish, salad, or veggie entree because it has pretty much any vegetable no matter how obscure, and dishes which are supposed to be vegetarian rather than dishes where you're substituting tofu for chicken with disappointing results.
