Ah! At it's best, Mozzarella is a fantastic cheese. I prefer it smoked, but both low-moisture and di Bufala is very good. Works perfect if you're going to make pizza, pasta or lasagne, or something Italien in general.
Cons: not so good if it's not fresh.
