Sambal is a SE Asian version of a chili sauce; the flavor is often more complex though because of other ingredients that add flavor. Sambal Oelek is familiar becase the makers of Sriracha(Rooster Sauce) produce a version, but Ulek is the boring Sambal. My favorite are Sambals Mata(Raw Balinese), Terasi(has fried fermented shrimp paste) and Hijau(Green from Sumatra). Chili sauce beyond compare!
