Thanks for a great recommendation Tom. I don't understand why this book is not more widely known. I bought a used copy on Amazon for a few bucks. I've just begun looking at it, and I am hooked. Right away I can tell that the book has been written with utmost care. Comes with blurbs from Julia Child and MFK Fisher.

A great encyclopedic reference to all things related to food. Not a cook book, but instead a history of foods, their chemistry, surveys of cooking styles, and generally interesting commentary.
